I don’t know about you but I really don’t like to heat up my kitchen in the summer. The days are longer, the weather warmer and we all just eat a little lighter. This Santa fe Chicken salad recipe is so filling and delicious but not too heavy. Plus, the slow cooker does all the work. You can literally toss most of the ingredients in the slow cooker and come home to dinner ready to enjoy.  It is the best dinner and a recipe we make frequently.

Perhaps it seems like child’s play to those of you who have been Weight Watchers’ fans and stuck to a diet for a lot longer than 14 days- but for me–it has been revelatory.

 

INGREDIENTS :

  • 2 boneless skinless chicken breasts
  • 14.4 oz can diced tomatoes with mild green chilies not drained
  • 15 oz can black beans drained
  • 1 cup frozen corn
  • 1/4 cup chopped fresh cilantro
  • 1 tsp minced garlic
  • 1 tsp cumin
  • 1 tsp salt
  • 8 cups spinach or your favorite kind of lettuce
  • 1 Avocado
  • 1cup cheddar cheese
  • Tortilla chips crushed

INSTRUCTIONS : 

  1. Place your chicken breasts on the bottom of the slow cooker. On top of the chicken dump in the, beans (drained), corn, tomatoes, cilantro, garlic, cumin, and salt in the crock pot.
  2. Cook on low for 8- 10 hours. Half hour before serving, remove chicken and shred or ice.
  3. Return chicken to slow cooker and stir in. Adjust salt and seasoning to taste.
  4. Serve over spinach or lettuce.
  5. Serve with avocado slices on top and crushed tortilla chips and shredded cheese.
