The niflettes are tartlets made from puff pastry garnished with custard of egg yolks, sugar, flour and milk; sometimes flavored with orange blossom.
Specialty Provins (Seine and Marne), niflettes were prepared in the Middle Ages for All Saints. According to tradition, this pastry was offered to orphans who cried and sniffed at their parents’ burial, telling them “Do not flounder” (do not cry anymore).
Today, the niflette is made in the region of Provins during the two weeks before and the two weeks after All Saints. Since 2018, the city of Provins organizes a feast of niflette November 1er.
